Lipala Posted November 2, 2010 Share Posted November 2, 2010 This one is extra yummy and rings up a total cost of about $10 but most of the ingredients you buy will come in quantities to be able to make a second batch. If you don't have Extra Virgin Olive Oil you can add about $5 to the price. You need a big pot for this. Pour 1 Quart vegetable stock in the pot. Add 1.5 Cups of uncooked lentils, dry. Mince 1/2 a Red Onion and add to pot. Mince or mash 2 cloves of garlic and add to pot. Chop 5 stalks of Celery and add to pot. Chop 5 Large Carrots and add to pot. Salt to taste (I usually throw just a pinch in) Bring to a boil and then reduce to simmer for 45 minutes. Check at 30 to be safe. There should be almost no Vegetable stock left. When Fagioli is nearly done prepare enough pasta for those eating, thin spaghetti or angel hair. Salt the water before cooking. Once done, drain the noodles and toss in olvie oil. Serve half and half pasta and fagioli. Add black pepper (fresh ground if available) and Parmesan (fresh grated if possible) to taste. This is delicious and serves about 6 but I've stretched it to 10 without complaint.
